The Lamb Curry at UFF – SERVES 2 PEOPLE

We only use red and ripe organic tomatoes and red onions to make our curry. This curry is a unique blend of whole spices and spices curated by Chef Uday. The curry is prepared with organic Halal lamb. The lamb is marinated overnight with dry spices and mustard oil. The meat is then char grilled in a coal grill. The lamb, vegetables and spices are then slow cooked for 2 hours. Ghee and spices included are in small proportions to retain the flavor and taste of the lamb and vegetables.

What is Lamb Curry?

Lamb curry is a dish that is prepared from lamb or goat meat and vegetables. The dish is found in different variations across all states, countries and regions of South Asia and the Caribbean. Lamb curry was originally prepared putting all the ingredients together in an earthen pot and slow cooking the whole curry by wood fire on a clay oven.

Defrosting and Heating Instructions

Two ways to Defrost:

1.Cut open the vacuum bag , take the food out and place it in the fridge for 6 hours or overnight.
2.Quick defrost – cut open the vacuum bag , keep the food out in room temperature for 3 hours.

Two ways to Heat food:

Oven

  1. Pre-heat the oven for 325F
  2. Put the food (curries) in the oven for 25 minutes.
  3. Put the rice in the oven for 10 minutes .

Stove Top

  1. Put the food (curries) in a saucepan or pot
  2. Cover the saucepan or pot
  3. Cook on medium heat for 10-15 mins – Curries
  4. Cook on medium heat for 5-10 mins – Rice
